Here we go again with my Mexican themed posts. Yes, we LOVE spicy Mexican meals in our house. From salads to tacos… the flavors can’t be beat. I use this marinade a lot. Spicy grilled steak, chicken or pork to carnitas or barbacoa in the slow cooker. This marinade is so versatile, you will want this recipe on hand all year long!
Spicy Mexican Meat Marinade
2 chipotle peppers in adobo sauce
2 tablespoons of the sauce from the chipotle’s in adobo
1 teaspoon black pepper
2 teaspoons cumin powder
2 tablespoons fresh oregano, chopped
6 cloves garlic
1/2 to 1 teaspoons salt
1 red onion, quartered
1 tablespoon honey
1 lime, zest and juice
1/4 cup Olive Oil
Combine all ingredients in food processor or blender and blend until smooth. Place your meat in a baggie or bowl and cover with marinade. It makes a lot , so if you don’t use it all, just store in an airtight container in the fridge for up to 2 weeks.
If you are going to grill your meat, I suggest you do it outside or with your kitchen fan on high. You need a well ventilated cooking space when marinaded meat is placed directly on the heat.
I will put a chuck roast or pork roast in the slow cooker and then cover with this sauce for barbacoa or carnitas. So simple. Let it go until your meat shreds easily! Put in your favorite lettuce wrap or paleo tortilla wrap and enjoy with salsa, fajita veggies, guacamole…
