I love Mexican food! Ok, my whole family likes Mexican food and we like it spicy! When the need hits for some spicy, this is my go to dressing. At our house we call it “Liquid Gold”. You need to make some to spice up your menu!
Honey Chipotle Dressing
1/4 cup red wine vinegar
1/4 of a medium sweet onion
3 tablespoons to 1/4 cup local raw honey (to taste)
3 tablespoons adobo sauce
1/4 teaspoon of salt (adjust to taste)
1/4 teaspoon fresh ground black pepper
1 tablespoon fresh oregano
3/4 to 1 cup of your favorite olive oil
Combine everything except the oil in the blender, blend until smooth. While the blender is running, slowly stream in the olive oil until it all emulsifies.
I love this on salads, burgers as a basting sauce for chicken, pork or steak when grilled. It goes great on a Mexican Salad with spicy grilled meat using my spicy meat marinade!
Keeps easily for two weeks in a air tight container in the fridge. It won’t last that long but you can try!
